Turns the shackle around, Grasps the neck skin and pulls it out of the way, Using the fingers of the other hand, grips and pulls the crop away from the neck area of the turkey, As needed (for turkeys that have a drop crop from this process), the turkey is lifted from the line shackle and hung on a rack shackle located behind the worker
Remove unwanted fragments from breast cavity - Grasp the tail area of the turkey, Insert the vacuum gun into the open cavity of the turkey, Holding the vacuum gun and covering the hole in the handle, move the gun around the inside of the turkey breast cavity, removing lungs and fragments, Pop heads out of shackle as needed. Popping heads occasionally is performed separately by an individual without using the lung gun
