Grab the scap skin with the glove hand. Using a knife, score the skin that is on the shoulder and pull skin away from the bird. Using the knife separate the piece of scap from the ribs. Pull the piece of scap meat the carcass and cut the skin. Cut off the piece of scap meat and toss it onto the belt.
Grab fillet with your gloved hand. Using your other hand grab the tear drop (piece of meat next to the tender that looks like a tear). Pull the tear drop upwards removing the fillet from the breast. Toss the fillet onto the top fillet belt and pull the breast half off and let it fall onto the lower breast belt.
