Grab a wing with one hand to steady the bird. With the other hand, trim the muscle away from the wing bone. Cut down one side of the bone and up the other side of the bone. Birds with broken wings. (Missing wings with wing bone in). With the other hand, trim the muscle away from the wing bone. Cut down one side of the bone and up the other side of the bone. Push the knife into the joint until you hit the bone. Turn the knife approximately 90 degrees downward to cut through the remaining part of the joint. Drop wing onto conveyor to go to the Wing Processor.Sharpen knife as needed.
